If you have trouble making it, you can replace quark with Greek yogurt. This will change the flavor slightly but will still work well.

Psyllium husk provides an extra dose of fiber, which we all need for proper digestion. This gives the bread more content and aroma of whole grains. Check what type of psyllium you have; If you want to use powdered psyllium, use only 1 ½ tablespoons instead of the 3 tablespoons listed for crushed husks.

Chia seeds. You can use black or white chia, depending on what you have. These amazing superfood seeds are not only packed with nutrients, but also act as binders. Therefore, you only need 3 eggs for this bread. Other low-carb bread recipes use up to six eggs. Less eggs = zero egg taste!
In addition to the above, we use baking powder, a pinch of salt and sunflower seeds. Sunflower seeds are optional. Any other seed will work just as well: sesame or pumpkin seeds, for example.

Step 1: In a large bowl, beat eggs and quark with an electric mixer until smooth.

Step 3: Add chia seeds and psyllium husks. Add optional sunflower seeds if using.
Step 4: Pour the batter into the loaf tin and leave for 15 minutes to allow the psyllium and chia to absorb the liquid. Sprinkle more sunflower seeds on top.
Step 5: Bake the bread for about 45 minutes or until the top is lightly golden and an inserted knife comes out clean.

I used a small (18 x 9 cm / 7 x 3.5 inch) 450ml pan. It is about half the size of regular loaf pans. Low carb breads tend to be very filling because they are nutritious, so this smaller size is perfect.
If you want to use a full-size pan, double the recipe and increase the oven time by approx. 15 minutes.
